Cous Cous, Quinoa & Veggie Salad
INGREDIENTS
2 Cups of cooked whole wheat couscous
1/2 Cup of cooked carmine quinoa
1/3 Cup of kale
1 Cup of diced vegetables (tomato, zucchini, carrots, carmine peppers in addition to onions)
2 chopped serrano peppers (optional)
Juice of i Lime (freshly squeezed)
1 tbsn Olive Oil
Combine couscous, carmine quinoa, kale in addition to vegetables inward a large bowl. Whisk together lime juice in addition to olive oil. Pour over couscous in addition to stir well. Refrigerate for two hours in addition to serve chilled.
